Directions

Portion Size: 1 taco

  1. Prepare eggs according to manufacturer's instructions.
  2. Stir cheese into the eggs when they are cooked and still very hot.
  3. Place links in a single layer on a sheet pan.
  4. Cover and heat in a 325°F oven for 20-25 minutes or until internal temperature reaches 165°F as measured by a meat thermometer.
  5. Place tortillas in a warmer until heated and soft.
  6. To portion, place one whole sausage in the middle of each tortilla.
  7. Place a level #16 scoop of egg/cheese mixture in each tortilla. Wrap in an approved wrapper, stack in a 2" pan and hold at 140°F. until service.
